Sliced Vegan, Fig, Arugula and Feta Pizza

Ingredients

  • 1 1 lb. (about 450g) pizza dough (store-bought or homemade)
  • flour (for dusting
  • ¾ cup vegan feta (store-bought or homemade (or can use vegan cream cheese)
  • 1 – 2 cups fresh arugula
  • 8 fresh figs, sliced (or 12 dried mission figs, stemmed and chopped)
  • ¼ cup chopped walnuts or pine nuts (optional)
  • 1 -2 tablespoons olive oil
  • 2 tablespoons balsamic glaze or balsamic reduction (could use a good quality balsamic vinegar)
  • salt and pepper to taste

Instructions

  • Preheat your oven to the temperature specified on your pizza dough packaging or your homemade pizza dough recipe instructions.
  • Roll out the pizza dough on a floured surface to your desired thickness. You can make one large pizza or divide the dough to make individual-sized pizzas.
  • Transfer the rolled-out dough to a pizza stone or a baking sheet lined with parchment paper. Drizzle the top with a tablespoon of olive oil.
  • Place the pizza in the preheated oven and bake according to your dough's instructions or until the crust is lightly golden brown.
  • Remove the pizza from the oven. Spread about a 1/2 cup of vegan "feta" cheese evenly over the pizza, leaving a border around the edges for the crust.
  • Scatter the figs around the top. Put back in the oven for 2 -3 minutes to heat. Then take out of the oven.
  • Take 1/4 cup of the vegan feta and spoon around pizza. Scatter the fresh arugula evenly over the baked pizza. If using, sprinkle chopped walnuts or pine nuts on top of the arugula.
  • Drizzle the whole pizza with 1 tablespoon of olive oil and balsamic glaze for extra flavor.
    Season with salt and black pepper to taste.
  • Slice the pizza into wedges or squares and serve it immediately.

    OMG this Pizza is absolutely AMAZING!!! Everyone needs one in their lives! I was so thrilled that my Farmer’s Market finally got Figs in because I was dying to make this! Well it was sheer perfection! I used a mix of baby arugula and spinach, made my own feta and it was ready and waiting to be part of this dish and then I added a bit of Calabrian Chili’s with a drizzle of the oil (I enjoy spice). I loved I think the one that I am going to make this weekend will be just with a drizzle of the hot oil because I just want the other flavors to shine through! This is a must make… you will never be sorry as you are biting into a warm bite of peppery arugula, tasty sweet figs, salty and briny feta all held by a yummy flatbread! FABULOUS!
