  • 2 lbs. potatoes, washed and dried (approx. 4 – 6 potatoes)
  • 3 tablespoons olive oil
  • 2 tablespoons nutritional yeast (optional)
  • 2 teaspoons Italian seasonings
  • 1 teaspoon garlic powder
  • salt and pepper, to taste
  • pinch of cayenne (optional)
  • fresh parsley or herbs for garnish (optional)

Instructions

  • Preheat your oven to 425°F (220°C).
  • If you prefer, peel the potatoes and cut them into bite-sized chunks. Or keep the peels on and cut them into chunks.
  • In a large mixing bowl, combine the diced potatoes with olive oil, dried oregano, dried thyme, dried rosemary, garlic powder, salt, and black pepper. Toss until the potatoes are evenly coated with the seasoning.
