Vegan Tomato Vegetable Skewers
Ingredients
- 1 pint cherry tomatoes
- 1 small zucchini, sliced into rounds
- 1 small yellow squash, sliced into rounds
- 1 small red onion, cut into chunks
- 1 small bell pepper, cut into chunks
- 8-10 wooden skewers, soaked in water for 30 minutes
Ingredients for the marinade
- 3 tablespoons balsamic vinegar
- 2 tablespoons extra-virgin olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions
1 – Preheat your grill or oven to medium-high heat.
2 – In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, fresh basil, fresh parsley, salt, and pepper to make the marinade.
3 – Thread the cherry tomatoes, zucchini slices, yellow squash slices, red onion chunks, and bell pepper chunks onto the skewers, alternating the vegetables.
4 – Brush the marinade generously over the vegetable skewers, coating them on all sides.
5 – Place the skewers on the grill or a baking sheet if using the oven.
6 -Grill or bake the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
6 – Remove the skewers from the grill or oven and let them cool slightly.
7 – Serve the Vegan Tomato and Vegetable Skewers as a delicious appetizer or main course. They can be enjoyed on their own or served with a side of rice, quinoa, or a fresh salad.
Raw Heirloom Tomato Cucumber Salad with Peach Dressing
Ingredients
- 2-3 heirloom tomatoes (mixed varieties)
- 1 large cucumber
- 1 small red onion
- Fresh basil leaves
- Salt and pepper to taste
Ingredient for dressing
- 1 ripe peach, peeled and pitted
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon maple syrup or agave nectar (optional)
- Salt and pepper to taste
Instructions
A1 – Slice the heirloom tomatoes into thick rounds or wedges. Slice the cucumber into thin rounds or half-moons. Thinly slice the red onion. Place them in a serving bowl.
2 – Tear fresh basil leaves into smaller pieces and add them to the bowl.
3 – In a blender or food processor, combine the peeled and pitted peach, extra-virgin olive oil, apple cider vinegar, and maple syrup (if desired). Blend until smooth.
4 – Season the peach dressing with salt and pepper to taste. Adjust the sweetness or tanginess by adding more maple syrup or apple cider vinegar if desired.
5 – Pour the peach dressing over the heirloom tomatoes, cucumber, and red onion. Gently toss to coat the salad evenly.
6 – Let the salad sit for a few minutes to allow the flavors to meld together.
7 – Taste and adjust the seasoning with salt and pepper if needed.
