Green Bean Curry
Ingredients
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 2 medium potatoes, peeled and diced
- 2 medium carrots, peeled and sliced
- 1 cup green beans, trimmed and cut into bite-sized pieces
- 1 can (14 ounces) coconut milk
- 1 cup vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- Cooked rice or naan bread, for serving
Instructions
1 – Heat the vegetable oil in a large skillet or pot over medium heat.
2 – Add the chopped onion and cook until softened and translucent, about 5 minutes.
3 – Stir in the minced garlic and grated ginger, and cook for an additional minute.
4 – Add the curry powder, cumin, turmeric, and cayenne pepper (if using). Stir well to coat the onions and spices.
5 – Add the diced potatoes and carrots to the skillet, and cook for 5 minutes, stirring occasionally.
6 – Add the green beans to the skillet and cook for another 2 minutes.
7 – Pour in the coconut milk and vegetable broth. Stir well to combine all the ingredients. Season.
8 – Bring the mixture to a boil, then reduce the heat to low and cover the skillet or pot. Simmer for about 15-20 minutes, or until the vegetables are tender.
9 – Taste and adjust the seasoning if needed.
10 – Serve the green bean curry over cooked rice or with naan bread. Garnish with fresh cilantro, if desired.
Note: Feel free to customize the spice level and adjust the amount of curry powder and cayenne pepper according to your preference.




Raw Marinated Green Beans with Sesame Seeds
Ingredients
- 1 pound fresh green beans
- 2 tablespoons tamari or soy sauce (use a gluten-free alternative if desired)
- 1 tablespoon fresh lemon juice + 1/2 teaspoon apple cider vinegar
- 1 tablespoon maple syrup or agave nectar
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger
- 1/8 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Sesame seeds for garnish
Instructions
1 – Wash the green beans thoroughly and trim off the ends. If desired, you can also remove the tough strings from the sides of the beans.
2 – In a small bowl, whisk together coconut aminos, lemon juice, apple cider vinegar, maple syrup or agave nectar, olive oil, minced garlic, grated ginger, red pepper flakes (if using), and salt.
3 – Place the green beans in a shallow dish or a resealable plastic bag.
4 – Pour the marinade over the green beans, making sure they are well-coated. You can use a spoon or your hands to mix them around.
5 – Let the green beans marinate in the refrigerator for at least 1 hour, or overnight is best for more intense flavors.
6 – Before serving, garnish with sesame seeds if desired.
7 – Enjoy the marinated green beans as a spicy, refreshing and flavorful side dish or as part of a salad. They can also be served as a snack or added to wraps or sandwiches.
Garden Tip
Harvest the green beans when they reach the desired size and are tender but crisp. Regularly pick the beans to encourage more production and prevent them from becoming tough and overripe. Remember to handle the plants gently when harvesting to avoid damaging the vines or breaking the delicate stems.
