Vegan Kale Caesar Salad

Ingredients

1 bunch of kale, stems removed and leaves torn into small pieces or cut into small strips
2 tablespoons pumpkin or hemp seeds (optional)


Ingredients for the Dressing

1/4 cup raw cashews, soaked for 4 hours and drained
2 tablespoons lemon juice
2 tablespoons water
1 tablespoon nutritional yeast
1 clove of garlic, minced
1 teaspoon Dijon mustard
1 teaspoon capers (optional)
Salt to taste

Instructions

1 – In a large bowl, place the torn kale leaves. Massage the leaves with your hands for a few minutes until they become tender. Then add seeds (if using) to the bowl. Toss to combine.
2 – In a blender or food processor, combine the soaked cashews, lemon juice, water, nutritional yeast, minced garlic, Dijon mustard, capers (if using), and salt. Blend until smooth and creamy.
3 – Pour the dressing over the kale salad and toss to coat the leaves thoroughly.
4 – Let the salad sit for about 10-15 minutes to allow the flavors to meld and the kale to soften slightly.
5 – Sprinkle freshly ground black pepper on top of the salad for added flavor.
6 – Serve the raw vegan kale Caesar salad and enjoy!

Raw Vegan Tropical Kale Smoothie

Ingredients

  • 1 cup packed kale leaves, stems removed
  • 1 cup frozen mango chunks
  • 1/2 cup frozen pineapple chunks
  • 1 ripe banana, peeled
  • 1 cup coconut water or unsweetened coconut milk
  • 1 tablespoon chia seeds or flax seeds (optional)
  • Juice of 1/2 lime (optional, for added tanginess)

Instructions

1 – Place the kale leaves, frozen mango chunks, frozen pineapple chunks, ripe banana, coconut water or coconut milk, chia seeds or flax seeds (if using), and lime juice (if using) into a blender.
2 – Blend on high speed until all the ingredients are well combined and the smoothie is creamy and smooth. If the mixture is too thick, you can add more coconut water or coconut milk as needed.
3 – Taste the smoothie and adjust the sweetness or tanginess by adding more banana or lime juice if desired.
4 – Pour the tropical kale vegan smoothie into a glass and serve immediately.
5 – You can also add ice cubes to the blender if you prefer a colder smoothie.

Garden Tips

You can start harvesting kale leaves when they reach the desired size, usually around 8-10 weeks after planting. Pick the outer leaves first, allowing the inner leaves to continue growing. Harvest the leaves in the morning when they are crisp and flavorful.

To ensure a continuous harvest, consider succession planting kale by sowing seeds or planting seedlings every few weeks. This way, you can enjoy a fresh supply of kale throughout the growing season.
