Tangy Vegan Feta with Fresh Herbs Recipe

Ingredients

  • 1 block firm or extra firm tofu, gently pressed to remove excess liquid
  • 2 Tablespoons lemon juice
  • 2 Tablespoons apple cider vinegar
  • 1/4 cup olive oil
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 Tablespoon fresh minced oregano
  • 1 teaspoon fresh minced thyme
  • 1 teaspoon fresh minced rosemary

Instructions

1 – Cut tofu in 1/2 inch cubes.
2 – Whisk together remaining ingredients in medium bowl or container; preferably one with locking lid.
l3 – Add cubed tofu & gently stir together, or lock lid in place and shake. Place in the fridge & allow to marinate overnight.
4 – Before serving, remove from the fridge for 30 minutes.
