Ingredients

  • 6 tablespoons ice water
  • ¼ teaspoon salt

For the Filling:

  • 2 medium zucchinis, sliced
  • 2 medium tomatoes, sliced or 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (from 2 -3 ears of corn)
  • ¼ cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • salt and pepper to taste

For the Vegan Feta:

  • 1 block of firm tofu, drained and crumbled
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt

For Assembly:

  • 2 tablespoons non-dairy milk (for brushing)
  • Fresh basil leaves, for garnish

Instructions

Prepare the Galette Crust:

  • In a food processor, pulse the flour and salt. Add the cold vegan butter and pulse until the mixture resembles coarse crumbs.
  • Slowly add ice water and pulse until the dough comes together. Shape into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.

Prepare the Filling:
