Ingredients
  

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup vegan mayonnaise
  • 1/4 cup chopped celery
  • 2 tablespoons chopped red onion
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon lemon juice
  • herbs and seasoning such as dill, paprika, smoked paprika, garlic or onion powder (optional)
  • salt and pepper
  • Bread or buns of your choice
  • Lettuce, tomato, and avocado for serving (optional)

Instructions
 

  • In a medium bowl, mash the chickpeas with a fork until they are slightly mashed but still chunky.
  • Add the vegan mayonnaise, celery, red onion, parsley, and lemon juice to the bowl and mix well.
  • Season with salt and pepper to taste.
  • Toast your bread or buns if desired.
