Chocolate Raspberry Layered Parfaits
These stacked Chocolate Raspberry Layered Parfaits are a treat, of perfect balance, of creamy richness and flavorful freshness. The layers of bright raspberry and rich chocolate are layered with vegan whipped cream. These visually stunning desserts can be made easily. Make them ahead of time for parties or celebrations, such as Valentine's Day, Mother's Day or other holidays. They are so simple and easy to make that they can be made for a special treat or a family dessert.

For the Chocolate Layer
- 1 12 ounce package of firm silken tofu
- 1/3 cup cocoa powder (unsweetened)
- 1/3 cup maple syrup or agave nectar
- 1/2 teaspoon vanilla extract (optional)
- a pinch of salt
For the Raspberry Layer
- 1 1/4 cups raspberries
- 8 ounces firm silken tofu (1 cup)
- 3 tablespoons maple syrup or agave nectar
- 2 teaspoons lemon juice
- 1/2 teaspoon vanilla (optional)
For Parfait layers and assembling:
- 1 cup vegan whipped cream, plus more if desired
- fresh raspberries, raspberry jam, vegan chocolate chips, vegan chocolate sprinkles, or granola for garnish (optional)
For the chocolate layer:
In a blender or food processor, combine the tofu, cocoa powder, maple syrup, vanilla extract, and a pinch of salt.
Blend until smooth and creamy. Adjust sweetness to taste. Put in container and refrigerate.
For the raspberry layer:
Rinse out the blender or food processor, from previous processing.
In the blender or food processor, combine the tofu, raspberries, maple syrup, lemon juice and vanilla extract. Blend until smooth.
Assembling:
In serving glasses or jars, spoon a layer of raspberry cream into each serving glass. Add a layer of chocolate cream, followed by vegan whipped cream. Repeat the layers as desired, finishing with whipped cream or raspberry cream.
Cover with plastic wrap and refrigerate for at least 30 minutes before serving. For a firmer texture, chill for 1–2 hours. Parfaits can also be refrigerated overnight.
