Ingredients
  

For the black beans:

  • 1 can (15 oz.) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • salt and pepper, to taste

For the tacos:

  • corn or flour tortillas
  • shredded lettuce
  • diced tomatoes
  • chopped red onions or green onions
  • salsa
  • guacamole or sliced avocado
  • fresh cilantro, chopped
  • lime wedges

Instructions
 

  • In a skillet, heat olive oil over medium heat. Add chopped onions sautéing until onions are translucent.
  • Add the drained black beans, minced garlic, ground cumin, chili powder, salt, and pepper to the skillet. Stir well to coat the beans in the spices. Cook for 5-7 minutes until heated through.
  • Heat the tortillas in a dry skillet or warm them in the oven according to the package instructions.
  • Spoon the seasoned black beans onto each tortilla.
  • Top with favorites, such as shredded lettuce, diced tomatoes, chopped red onion, salsa, and guacamole or sliced avocado. Garnish with fresh cilantro and serve with lime wedges on the side.
