Ingredients
  

  • 1 large ripe cantaloupe, peeled, seeded, and chopped
  • 1/2 cup coconut milk
  • 1/4 cup orange juice
  • 1 1/2 tablespoons lime juice
  • 3 tablespoons maple syrup (or agave nectar)
  • 1/4 teaspoon ginger (optional)
  • pinch of salt
  • fresh mint leaves or extra diced cantaloupe or mango, for garnish (optional)

Instructions
 

  • In a blender, combine the chopped cantaloupe, coconut milk, lime, maple syrup orange juice, ground ginger, and a pinch of salt. Blend until smooth and creamy.
  • Taste the soup and adjust the sweetness or acidity as desired. Add more lime juice or maple syrup if needed.
  • Transfer the soup to a bowl or container and refrigerate for at least 1 hour to chill and allow the flavors to meld.
  • Once chilled, pour the soup into bowls. Garnish with fresh mint leaves and, if desired, add diced cantaloupe or mango for added texture.
