- 1 large ripe cantaloupe, peeled, seeded, and chopped
- 1/2 cup coconut milk
- 1/4 cup orange juice
- 1 1/2 tablespoons lime juice
- 3 tablespoons maple syrup (or agave nectar)
- 1/4 teaspoon ginger (optional)
- pinch of salt
- fresh mint leaves or extra diced cantaloupe or mango, for garnish (optional)
In a blender, combine the chopped cantaloupe, coconut milk, lime, maple syrup orange juice, ground ginger, and a pinch of salt. Blend until smooth and creamy.
Taste the soup and adjust the sweetness or acidity as desired. Add more lime juice or maple syrup if needed.
Transfer the soup to a bowl or container and refrigerate for at least 1 hour to chill and allow the flavors to meld.
