Easy Vegan Macaroni and Cheese
Vegan macaroni and cheese is a plant-based version of the classic comfort food. It's made with a creamy cashew-based sauce, nutritional yeast for a cheesy flavor, and various spices and seasonings. It's super easy to make and so delicious! Vegan mac and cheese can be served as a main dish or as a side dish and can be customized with different add-ins, such as roasted veggies or vegan bacon bits.
- 1 pound elbow macaroni
- 1 cup raw cashews
- 1/4 cup nutritional yeast
- 2 cups vegetable broth
- 1/4 cup lemon juice
- 2 cloves garlic
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp smoked paprika
- 1/4 tsp turmeric
- 1/4 tsp black pepper
- Optional toppings: chopped parsley, breadcrumbs
Cook the elbow macaroni according to package instructions.
While the macaroni cooks, combine the cashews, vegetable broth, nutritional yeast, lemon juice, garlic, onion powder, salt, smoked paprika, turmeric, and black pepper in a blender. Blend until smooth and creamy.
Drain the cooked macaroni and return it to the pot. Pour the cheese sauce over the macaroni and stir to combine.
Heat the macaroni and cheese over low heat until heated through.
Serve hot with chopped parsley and/or breadcrumbs as desired. Enjoy your vegan macaroni and cheese!
