Easy Vegan Potato Salad

This easy vegan potato salad is a simple and delicious side dish that's perfect for picnics, barbecues, or any other summer gathering. It's made with boiled potatoes, and a creamy dressing that's completely dairy-free. This recipe is quick to make and can be customized to suit your taste.

Ingredients
  

  • 2 pounds baby potatoes
  • 1/2 cup vegan mayonnaise
  • 1/2 cup plain vegan yogurt
  • 2 tablespoon Dijon mustard
  • 1 small red onion, chopped
  • 1/4 cup fresh dill, chopped
  • salt and pepper to taste

Instructions
 

  • Wash and cut the potatoes into bite-sized pieces.
  • Boil the potatoes in a pot of salted water until tender, about 10-12 minutes.
  • Drain the potatoes and let them cool.
  • In a large mixing bowl, mix together the vegan mayonnaise, plain vegan yogurt, Dijon mustard, chopped red onion, and chopped dill.
  • Add the cooled potatoes to the bowl and mix well.
  • Season with salt and pepper to taste.
  • Chill the potato salad in the fridge for at least an hour before serving. Enjoy!
