- 2 pounds baby potatoes
- 1/2 cup vegan mayonnaise
- 1/2 cup plain vegan yogurt
- 2 tablespoon Dijon mustard
- 1 small red onion, chopped
- 1/4 cup fresh dill, chopped
- salt and pepper to taste
Wash and cut the potatoes into bite-sized pieces.
Boil the potatoes in a pot of salted water until tender, about 10-12 minutes.
Drain the potatoes and let them cool.
In a large mixing bowl, mix together the vegan mayonnaise, plain vegan yogurt, Dijon mustard, chopped red onion, and chopped dill.
Add the cooled potatoes to the bowl and mix well.
Season with salt and pepper to taste.
