215 ouncecans cannellini or Great Northern beans, drained and rinsed
1cupfresh green beans, trimmed and cut into bite-sized pieces
1stalkcelery, thinly sliced
4 -5 radishesthinly sliced or diced
1/4cupfresh parsley, chopped
2tablespoonscappers, drained
2tablespoonschopped fresh chives
1teaspoonchopped fresh tarragon (optional)
For Dijon-Shallot Vinaigrett
1smallshallot, finely chopped
1/4cupextra-virgin olive oil
2tablespoonsfresh lemon juice
1tablespoonDijon mustard
1teaspoonmaple syrup
1teaspooncoconut vinegar
1/2teaspooncaper brine, (optional)
1/3teaspoonsea salt
Instructions
Soften the shallot. Add the finely chopped shallot, lemon juice, Dijon mustard, maple syrup, caper brine, salt, and pepper to a small bowl. Stir and let sit for 10–15 minutes. This mellows the raw shallot and lets its flavor infuse the dressing.
Blanch the green beans. Bring a small pot of water to a boil. Add the green beans and cook for 2–3 minutes, until bright green and crisp-tender. Drain and immediately rinse under cold water. Pat dry.
Finish the vinaigrette. Slowly whisk the olive oil into the shallot mixture until the dressing is well combined.
Assemble the salad. Add the white beans, green beans, celery, radishes, parsley, chives, tarragon, and capers to a large bowl.
Pour the Dijon-shallot vinaigrette over the salad and gently toss until everything is evenly coated.Rest before serving. Let the salad sit for about 15 minutes so the beans absorb the vinaigrette. Taste and adjust the lemon, salt, or Dijon if needed.
Notes
Fresh tarragon is optional, but it gives the salad a distinctly French flavor. If you prefer, use a small amount of fresh dill instead. The salad can also be chilled for an hour before serving for a stronger, more developed flavor.
