Fresh Green Spinach Shooters Appetizer (no cook appetizer)

These chilled green shooters are fresh, vibrant, and perfect for spring and summer entertaining. Blended with cucumber, avocado, spinach, herbs, and citrus, they create a smooth and refreshing appetizer that feels elegant while coming together in under 15 minutes, and then chilled. Served in small glasses with simple garnishes, they make a beautiful addition to brunches, parties, showers, and warm-weather gatherings.

Ingredients
  

  • 2 medium cucumbers, peeled, seeded, and chopped
  • 1 ripe avocado
  • 1 cup baby spinach
  • 2 green onions, chopped
  • 2 tablespoons fresh lime juice (or lemon)
  • 1 clove garlic
  • 1 teaspoon coconut vinegar
  • 1 teaspoon coconut amino (or tamari)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper (optional)
  • 1 teaspoon onion powder
  • 1/2 cup vegetable broth, cold (or water) - adjust for desired thickness
  • 1/8 cup (optional to add flavor): fresh basil, parsley or dill
  • (optional) garnish: chopped walnuts, microgreens, thin cucumber ribbons, fresh herbs, diced cucumber, flaky sea salt, vegan sour cream, sundried tomato, chopped green onions

How to Make Green Spinach Shooters Appetizer

  • Add the cucumber, avocado, spinach, green onions, citrus juice, garlic, olive oil, vegetable broth, vinegar, coconut amino, onion powder, and herbs to a blender. Blend until completely smooth and creamy.
  • Season with salt and pepper to taste. If needed, add a little more broth to reach your preferred consistency.
  • Chill for at least 20 - 30 minutes for the best flavor and texture.
  • Pour into small shooter glasses or appetizer cups. Wipe away any smudges, so everything looks clean and pretty. Add garnish just before serving.
