Ingredients
  

For the pumpkin brownies:

  • 1 1/2 cup canned pumpkin puree
  • 1/2 cup coconut oil, melted
  • 1/2 cup plant based milk (almond milk, coconut milk)
  • 1 teaspoon vanilla extract
  • 3/4 cup brown sugar, packed
  • 1 1/2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon pumpkin spice
  • 1/2 cup dairy-free chocolate chips (optional - for more chocolate flavor)

For the brownie glaze: (optional)

  • 1/2 cup powdered sugar
  • 2 tablespoons cocoa powder
  • 2 -3 tablespoons almond milk (or any plant-based milk)
  • 1/2 teaspoon vanilla extract
  • pinch of salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease or line a square baking pan with parchment paper.
  • In a large mixing bowl, combine the pumpkin puree, melted coconut oil, plant based milk, brown sugar, and vanilla extract. Mix until well combined.
  • In a separate bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, and pumpkin spice.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
