Roasted Carrot Hummus

Roasted carrot hummus shows off a beautiful earthy color. But it really shines in flavor with it's natural sweetness of roasted carrots and creamy richness of the chickpeas and tahini. Ingredients
  

  • 2 large carrots, peeled and sliced into thin rounds
  • 1 15 oz. can chickpeas, drained and rinsed
  • 2-3 cloves garlic, minced
  • 3 tablespoons tahini (sesame paste)
  • 3 tablespoons fresh lemon juice (about 1 lemon)
  • 2 tablespoons olive oil, plus extra for roasting
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander (optional)
  • 1/2 teaspoon paprika
  • salt and pepper, to taste
  • water, as needed for consistency
  • fresh parsley, for garnish (optional)

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Toss the carrot rounds with a drizzle of olive oil and a pinch of salt and pepper.
    Spread the carrots out on a baking sheet and roast for about 20-25 minutes or until they are tender and slightly caramelized. Allow them to cool slightly.
  • In a food processor, combine the roasted carrots, drained chickpeas, minced garlic, tahini, fresh lemon juice, olive oil, ground cumin, ground coriander (if using), paprika, salt, and pepper.
  • Start blending the ingredients in the food processor. If the mixture is too thick, you can add a bit of water, one tablespoon at a time, until you achieve your desired hummus consistency. Continue blending until the hummus is smooth and creamy.
  • Taste the hummus and adjust the seasoning if necessary. You can add more lemon juice, salt, or spices to suit your taste.
  • Transfer the roasted carrot hummus to a serving bowl. Drizzle a little olive oil over the top and garnish with fresh parsley if desired.
  • Serve the hummus with pita bread, vegetable sticks, or as a dip for your favorite snacks. It also makes a great spread for sandwiches and wraps.
