Simple Vegan Meatloaf

- 1 cup cooked lentils
- 1 cup finely chopped mushrooms
- 1/2 cup onions
- 1/2 cup breadcrumbs
- 1/4 cup ketchup
- 2 tablespoons soy sauce or coconut aminos
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika or paprika (optional)
- 2 tablespoons nutritional yeast (optional)
- 1/8 teaspoon cayenne (optional)
- salt and pepper to taste
Preheat the oven to 350°F.
Sauté onions in oil in a skillet for 2 minutes. Then add in mushrooms and sauté another 3 minutes.
In a large bowl, add the cooked lentils, mushrooms, onions, breadcrumbs, ketchup, soy sauce, olive oil, thyme, garlic powder, salt, and pepper. Add in paprika, nutritional yeast and cayenne if using these options. Mix together well.
Transfer the mixture into a loaf pan and press it down.
Bake for 45 minutes, or until the top is golden brown.
Let it cool for a few minutes before slicing and serving.
