Soy Milk
Vegan soy milk is a plant-based milk alternative made from soybeans that is suitable for those who are lactose intolerant, have a dairy allergy, or follow a vegan or plant-based diet. It is typically used as a substitute for cow's milk and can be used in a variety of culinary applications, baking, and cooking. - 1 cup soybeans
- 4 cups water
- Sweetener of your choice (optional)
Rinse the soybeans and soak them in water overnight or for at least 8 hours.
Drain the beans and blend them with 4 cups of water until smooth.
Strain the mixture through a cheesecloth or nut milk bag into a pot.
Heat the mixture over medium heat, stirring occasionally, until it comes to a boil.
Reduce the heat to low and simmer for 20-25 minutes.
Remove from heat, let cool, and add sweetener if desired.
Store in the refrigerator for up to 4 days.
