Ingredients
  

For the crostini

  • Baguette or French bread, sliced into thin rounds
  • olive oil, for brushing

For the topping

  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup baby spinach leaves
  • 1/2 cup shelled pistachios, roughly chopped (can used toasted pumpkin seed, too)
  • vegan cream cheese or vegan ricotta (store-bought or homemade)
  • balsamic glaze (store-bought or homemade)

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Place the baguette slices on a baking sheet. Lightly brush both sides of each slice with olive oil.
  • Bake in the preheated oven for about 10-12 minutes, or until the crostini are crisp and golden. Remove from the oven and let them cool.
  • Spread a layer of vegan cream cheese or vegan ricotta on each cooled crostini slice.
  • Top the spread with a few baby spinach leaves.
  • Add a couple of strawberry slices on top of the spinach.
  • Sprinkle chopped pistachios over the strawberries.
  • Finish the crostini by drizzling a touch of balsamic glaze over each piece. The balsamic glaze adds a delightful tangy-sweet contrast to the flavors.
