Sun-Dried Tomato, Basil and Chickpea Burgers

Ingredients
  

  • 1 15 oz can chickpeas, drained and rinsed
  • 1/2 cup sun-dried tomatoes, (packed in oil), drained and chopped
  • 3/4 cup fresh basil leaves, chopped
  • 1/2 cup rolled oats (or bread crumbs)
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 2 tablespoons tahini
  • 1/8 cup nutritional yeast
  • 2 tablespoons coconut aminos ( soy sauce or tamari -gluten free)
  • 1 tablespoon lemon juice ( balsamic vinegar or coconut vinegar)
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin (optional)
  • 1/8 teaspoon cayenne
  • 1/4 teaspoon salt (or to taste)

Instructions
 

  • In a food processor, combine all the ingredients: the chickpeas, sun-dried tomatoes, fresh basil, rolled oats, red onion, garlic, nutritional yeast, lemon juice or balsamic vinegar, coconut aminos, and seasonings. Pulse until the mixture comes together but still has some texture. You don't want it to be completely smooth.
  • Divide the mixture into equal portions and shape them into burger patties.
  • In a skillet, heat a bit of olive oil over medium heat. Place the burger patties in the skillet and cook for about 4-5 minutes on each side, or until they are golden brown and heated through.
  • Toast the burger buns if desired. Spread vegan mayo or your preferred sauce on the bottom bun. Top with a cooked veggie patty. Add fresh lettuce or spinach leaves, sliced tomatoes, and red onion slices. Complete the burger with the top bun.
  • Serve the Sun-Dried Tomato and Basil Veggie Burgers with your favorite side dishes, such as sweet potato fries, a mixed green salad, or coleslaw
