Vegan Cashew Ranch Dressing

This easy vegan cashew ranch dressing is creamy, tangy, and full of classic ranch flavor from dill, parsley, chives, garlic, onion, Dijon mustard, and apple cider vinegar. Use it as a salad dressing, veggie dip, or dairy-free sauce.

Ingredients
  

  • 1 cup raw cashews, rinsed and drained (previously soaked for 4 hours, or soaked in hot water for 20 mins.)
  • 2/3 cup water
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon dried parsley
  • 1 teaspoon dried dill
  • 1 teaspoon dried chives
  • 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • pinch of cayenne pepper (optional)

Instructions
 

  • In blender, combine water, cashews, apple cider vinegar, lemon juice, nutritional yeast, garlic powder, onion powder, salt, pepper, and mustard until smooth. Standard blenders may require a longer blend cycle (60 - 90 seconds) to ensure optimal silkiness.
  • Add parsley, dill, and chives. Pulse blend or stir in herbs.
  • If the dressing is too thick, add water a tablespoon at a time until you reach your desired consistency.
  • Refrigerate the vegan ranch dressing for at least 30 minutes before serving to allow the flavors to meld. Stir before serving.
  • Taste the dressing and adjust the seasonings if necessary. You can add more herbs, apple cider vinegar, or salt based on your preference.

Notes

For the smoothest dressing, soak the cashews in hot water for 15–20 minutes, then drain. If using a high-speed blender, you may skip this step.
