Vegan Garlic Butter Mushrooms

- 16 ounces mushrooms (button or cremini) sliced or rough chopped
- 3 tablespoons vegan butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil (optional, for extra richness)
- salt and pepper, to taste
- 2 tablespoons fresh parsley, choppped
- 1 teaspoon lemon juice (optional, for brightness)
Clean and slice or chop mushrooms evenly.
In a large skillet over medium heat, melt the vegan butter (and olive oil if using).
Add mushrooms in a single layer. Let them cook undisturbed for 3–4 minutes to develop color, then stir.
Continue cooking for 6–8 minutes, stirring occasionally, until mushrooms release moisture and become golden. Sauté until tender
Stir in minced garlic and cook for 1–2 minutes until fragrant.
Add salt, pepper, and lemon juice if using. Stir well.
Sprinkle with fresh parsley and serve warm.
