Vegan Goji Berry Energy Bites

These vegan goji berry energy bites are chewy, naturally sweet, and packed with oats, almond butter, coconut, flaxseed, and dried goji berries. They’re an easy no-bake snack for meal prep, lunchboxes, or a quick afternoon bite.

Ingredients
  

  • 1 cup rolled oats
  • 2/3 cup almond butter (or any nut/seed butter of your choice)
  • 1/8 cup maple syrup or agave nectar
  • 1/4 cup ground flaxseeds (optional)
  • 1/2 cup shredded coconut (plus extra for coating, optional)
  • 1/3 cup goji berries
  • pinch of salt

Instructions
 

  • In a large bowl or food processor, mix together rolled oats, ground flaxseeds, shredded coconut, and a pinch of salt.
  • Add almond butter, maple syrup (or agave nectar) to the dry ingredients. Mix until well combined.
  • Gently fold in the goji berries, ensuring they are evenly distributed throughout the mixture.
  • Once the mixture has chilled, take small portions and roll them into bite-sized balls. (Note: to make it easier to handle, you can place the mixture in the refrigerator for about 15 - 30 minutes before handling and shaping into bites.)
  • Roll each energy bite in shredded coconut until lightly coated. (optional)
  • They are fine to eat right away. (Note: if storing then place the energy bites on a parchment-lined tray and let them set in the refrigerator for at least an hour. Once set, store the energy bites in an airtight container in the refrigerator. Serve as a quick and nutritious snack.)
