Vegan Mediterranean Pizza

This easy vegan Mediterranean pizza recipe is perfect for a weeknight dinner or a casual get-together. The combination of zucchini, tomatoes, onions, garlic, artichoke hearts, roasted red peppers, mushrooms, olives and feta on a crispy, golden crust topped with a rich tomato sauce, makes a truly irresistible meal. This homemade vegan Mediterranean pizza is easy to make and such a crowd-pleaser with it's layer of tastes. Each bite will just make you crave more!

Ingredients
  

  • 1 pre-made pizza dough (store-bought or homemade)
  • 1 tablespoon olive oil (to brush pizza crust) - optional
  • 1/2 cup pizza or marinara sauce
  • 1 - 2 sliced tomatoes, (or 1/2 cup cherry tomatoes, halved)
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced (or use black or green olives)
  • 1/3 cup artichoke hearts, quartered
  • 1/4 cup roasted red peppers, diced
  • 1/4 cup vegan feta cheese, crumbled
  • fresh basil leaves
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1 garlic, thinly sliced or minced (optional)
  • pinch of red pepper flakes

Instructions
 

  • Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.
  • Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer the dough to a pizza peel or baking sheet lined with parchment paper.
    Brush the dough with olive oil, especially around the edges for a crispy crust.
  • Spread the tomato sauce evenly over the pizza dough.
    Layer the toppings over the sauce. Add the red onion, garlic, sliced tomatoes, Kalamata olives, artichoke hearts, roasted red peppers, and vegan feta cheese evenly over the pizza. Sprinkle with the herbs (thyme, oregano and dash of red pepper).
  • Carefully transfer the pizza to the preheated oven or onto the pizza stone.
    Bake for 10-12 minutes, or until the crust is golden brown and the toppings are heated through.
  • Remove the pizza from the oven and let it cool slightly. Garnish with fresh basil leaves. Slice and serve warm.
