- 2 ripe bananas, frozen
- 1 cup spinach leaves, fresh
- 5 - 7 fresh mint leaves (optional)
- 1 cup unsweetened almond milk (or any plant-based milk)
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon peppermint extract
- 1 -2 tablespoons maple syrup or agave syrup, to taste
- vegan chocolate chips, or whip cream, for garnish (optional)
Place the frozen bananas, fresh spinach leaves, almond milk, vanilla extract, peppermint extract, and maple syrup/agave syrup in a blender.
Blend on high speed until smooth and creamy, scraping down the sides of the blender as needed to ensure everything is well combined.
Taste the shake and adjust the sweetness or mint flavor as desired by adding more maple syrup/agave syrup or peppermint extract.
Once you've reached your desired consistency and flavor, pour the shake into glasses.
If desired, top each shake with vegan whipped cream and a sprinkle of vegan chocolate chips for garnish.
