Vegan Mushroom Gravy

Ingredients
  

  • 1 1/2 cups vegetable broth
  • 1/4 cup unsweetened non-dairy milk (such as almond or soy)
  • 1/2 cup chopped mushrooms
  • 2 tablespoons vegan butter or olive oil
  • 2 tablespoons all-purpose flour
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 tablespoon coconut amino, tamari, or soy sauce
  • 1/2 teaspoon dried thyme (optional)
  • salt and pepper to taste

Instructions
 

  • In a small saucepan, melt the vegan butter over medium heat.
  • Add the mushrooms and sauté until they are tender.
  • Add the flour and whisk until smooth.
  • Slowly pour in the vegetable broth, whisking constantly to prevent lumps.
  • Add the non-dairy milk, nutritional yeast, onion powder, garlic powder, thyme salt, and pepper.
  • Whisk until the gravy is smooth and heated through.
  • Serve hot
