Vegan Pesto Pasta
Vegan pesto pasta is a popular plant-based dish that is packed with fresh and vibrant flavors. - 8 oz of pasta (spaghetti, linguine, fettucine, or penne)
- 2 cups fresh basil leaves
- 1 cup pine nuts (or walnuts)
- 2 - 3 cloves of garlic, minced
- 1/4 cup extra virgin olive oil
- 1 tablespoon lemon juice
- 1/4 cup vegan parmesan cheese or nutritional yeast
- salt and pepper to taste
Cook the pasta according to the package instructions until al dente. Drain and set aside.
In a food processor or blender, combine the fresh basil, pine nuts or walnuts, minced garlic, olive oil, lemon juice, salt, and pepper. Process until smooth and creamy.
Taste the pesto and adjust the seasoning with more salt, pepper, or lemon juice as needed.
In a large mixing bowl, toss the cooked pasta with the vegan pesto until well coated.
Serve the pesto pasta warm, garnished with additional fresh basil leaves and vegan parmesan cheese, if desired.
