Vegan Pesto Pasta

Vegan pesto pasta is a popular plant-based dish that is packed with fresh and vibrant flavors. It features a creamy sauce made from basil, nuts, garlic, olive oil, and lemon juice, which is tossed with cooked pasta to create a satisfying and delicious meal. This pesto pasta is not only suitable for vegans, but also loved by anyone who appreciates the aromatic and herb-infused taste of traditional pesto.

Ingredients
  

  • 8 oz of pasta (spaghetti, linguine, fettucine, or penne)
  • 2 cups fresh basil leaves
  • 1 cup pine nuts (or walnuts)
  • 2 - 3 cloves of garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1/4 cup vegan parmesan cheese or nutritional yeast
  • salt and pepper to taste

Instructions
 

  • Cook the pasta according to the package instructions until al dente. Drain and set aside.
  • In a food processor or blender, combine the fresh basil, pine nuts or walnuts, minced garlic, olive oil, lemon juice, salt, and pepper. Process until smooth and creamy.
  • Taste the pesto and adjust the seasoning with more salt, pepper, or lemon juice as needed.
  • In a large mixing bowl, toss the cooked pasta with the vegan pesto until well coated.
  • Serve the pesto pasta warm, garnished with additional fresh basil leaves and vegan parmesan cheese, if desired.
