Vegan Strawberry Banana Bread
This Vegan Strawberry Banana Bread is soft, moist, and bursting with fresh strawberry flavor. Made with ripe bananas and simple pantry ingredients, it's an easy quick bread that's perfect for breakfast, brunch, snacking, or sharing with friends and family.

- 2 cups all-purpose four
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup cane sugar
- 1 tablespoon ground flax seed
- 3 tablespoons water (for flax seed egg)
- 1 tablespoon cornstarch
- 3 large ripe bananas, mashed
- 1/2 cup unsweetened plant-based milk (coconut, soy, almond milk)
- 1/2 cup cocunut oil
- 2 teaspoons vanilla extract
- 1 tablespoon lemon juice
- 1 cup fresh strawberries, diced
- 1/4 teaspoon salt
Strawberry Glaze
- 1 1/2 cups powdered sugar
- 2 tablespoons strawberry puree (strained to remove seeds)
- 1 teaspoon lemon juice
Preheat oven to 350°F (175°C). Grease or line a 9x5-inch loaf pan.
In a small bowl or cup mix ground flax seed and water. Set aside.
In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and sugar.
In a separate bowl, mash bananas. Then whisk together the plant milk, oil, applesauce, vanilla, flaxseed egg, and lemon juice.
Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the strawberries.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Strawberry Glaze (Optional)
Combine and whisk powdered sugar. strawberry puree, and lemon juice, in a bowl.
Check the thickness, as it should flow off the spoon like maple syrup. Adjust thickness. Whisk in 1 tablespoon of powder sugar if too thin, or add a tiny splash of lemon juice if too thick.
Drizzle over the cooled loaf.
