Baked Green Lentil Meatballs (Vegan)
This recipe is for Baked Green Lentil Meatballs and they are so easy to make. They are perfect for serving with pasta, in sandwiches, added to salads or grain bowls. These Quick Lentil Meatballs are so easy to make. Great for a weeknight meal. They make a great addition to lunch boxes, too.

- 1 1/2 cup cooked green lentils, drained (can use brown or canned lentils)
- 2/3 cup breadcrumbs (or oat flour)
- 1/4 cup nutritional yeast
- 1/4 cup onion, finely diced
- 3 cloves garlic, minced
- 1/4 cup chopped parsley
- 1 tablespoon soy sauce, tamari (gluten free), or coconut amino
- 2 tablespoons tomato paste
- 1 tablespoon italian seasoning
- 1/4 teaspoon salt, or to taste
- 1 tablespoon water as needed (optional)
Preheat the oven to 400°F.
In a skillet, add olive oil and onion. Cook until onion is softened, about 5 minutes. Then add garlic and stir while cooking for one minute.
In a food processor, pulse together the cooked lentils, breadcrumbs, nutritional yeast, onion, garlic, parsley, soy sauce, tomato paste, salt, and italian seasonings until it is combined and starts to stick together. If dough is too dry and you need to add water, add one tablespoon at a time, until consistency can stick together to be able to form meatballs.
Shape the combined mixture into small meatballs.
Place the meatballs on a baking sheet lined with parchment paper.
Turn and flip meatballs over halfway through baking. Bake for 20-25 minutes, or until golden brown.
