BBQ Cauliflower Tacos

For the BBQ cauliflower:
- 1 medium head of cauliflower, cut into florets
- 3/4 cup barbecue sauce (vegan store bought or homemade)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- salt and pepper, to taste
For the slaw:
- 2 cups shredded cabbage (purple, green or combo)
- 1 carrot grated
- 1/3 cup vegan mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon maple syrup or agave
- salt or pepper, to taste
For Assembly:
- 8 small tortillas (corn or flour)
- avocado slices
- fresh cilantro, chopped
- lime wedges
Preheat your oven to 425°F (220°C).
In a large bowl, mix the cauliflower florets with olive oil, smoked paprika, garlic powder, salt, and pepper.
Spread the cauliflower on a baking sheet and roast in the oven for about 10 minutes.
Then remove cauliflower from the oven and put back in the bowl. Toss the roasted cauliflower with barbecue sauce until well coated. Put back on baking sheet and roast for another 10 - 15 minutes.
In a bowl, combine shredded cabbage, grated carrot, vegan mayonnaise, apple cider vinegar, maple syrup, salt, and pepper. Mix well until the slaw is evenly coated.
To assemble the tacos, warm the tortillas according to package instructions.
Spoon a generous portion of BBQ cauliflower onto each tortilla. Then top with the slaw, avocado slices, and chopped cilantro.
Squeeze a lime wedge over each taco for a burst of freshness. Arrange the tacos on a platter and serve immediately.
