Ingredients

For the BBQ cauliflower:

  • 1 medium head of cauliflower, cut into florets
  • ¾ cup barbecue sauce (vegan store bought or homemade)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • salt and pepper, to taste

For the slaw:

  • 2 cups shredded cabbage (purple, green or combo)
  • 1 carrot grated
  • cup vegan mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup or agave
  • salt or pepper, to taste

For Assembly:

  • 8 small tortillas (corn or flour)
  • avocado slices
  • fresh cilantro, chopped
  • lime wedges

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, mix the cauliflower florets with olive oil, smoked paprika, garlic powder, salt, and pepper.
