Ingredients
  

  • 1 cup blueberries, fresh
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 teaspoons lemon juice
  • 2 tablespoons maple syrup or agave
  • 1 teaspoon Dijon mustard
  • salt and pepper to taste

Instructions
 

  • Rinse the fresh blueberries under cold water and drain.
  • In a blender or food processor, combine the blueberries, balsamic vinegar, lemon juice, olive oil, Dijon mustard, maple syrup, salt, and pepper.
  • Blend the ingredients until you achieve a smooth and well-combined consistency. If the dressing is too thick, you can add a bit more (1 tablespoon at a time) olive oil or water to reach your desired thickness.
  • Taste the vinaigrette and adjust the sweetness or acidity according to your preference. You can add more maple syrup for sweetness or balsamic vinegar for acidity.
  • IF you prefer a smoother texture, you can strain the vinaigrette using a fine mesh sieve to remove the blueberry skins. This step is optional, depending on your texture preference.
  • Transfer the blueberry vinaigrette to a glass jar or bottle. Refrigerate until ready to use. Shake well before serving.
