Equipment

  • 1 cutting board and knife
  • 1 food processor or grater
  • 1 mixing bowl
  • 1 spoon or spatula for mixing

Ingredients
  

  • 1 small head of cauliflower
  • 1 cup fresh parsley, finely chopped
  • 1/4 cup fresh mint leaves, finely chopped (optional)
  • 1 medium cucumber, peeled, seeded and diced
  • 1/2 cup cherry tomatoes, halved
  • juice of 1 lemon (2 -3 tablespoons)
  • 2 tablespoons extra-virgin olive oil
  • salt and pepper to taste
  • 1/8 cup finely chopped red onion or chopped green onion (optional)

Instructions
 

  • Remove the leaves and core from the cauliflower and cut it into florets. Place the florets in a food processor and pulse until they resemble fine rice-like pieces. Be careful not to over-process and turn it into a puree.
  • Transfer the cauliflower "rice" to a large mixing bowl. Add the chopped parsley, mint leaves, cucumber, cherry tomatoes, and red or green onion. Mix well to combine.
  • In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the cauliflower mixture and toss to coat everything evenly.
  • Allow the tabbouleh to sit for at least 10-15 minutes to allow the flavors to meld together.
  • Taste and adjust the seasoning if needed. You can add more lemon juice, olive oil, salt, or pepper according to your preference.
    Serve the cauliflower tabbouleh chilled or at room temperature as a refreshing and healthy side dish or salad. It can also be used as a filling for wraps or stuffed into pita bread.
