Cilantro Lime Rice

This vibrant dish of Cilantro Lime Rice is perfectly cooked long-grain white rice infused with the zesty essence of fresh lime juice and cilantro. This dish is a tangy accompaniment to Mexican-inspired feasts, serving as an ideal base for burrito bowls, alongside vegan tacos or enchiladas.

Ingredients
  

  • 1 cup long-grain white rice
  • 2 cups vegetable broth (or water)
  • 1 tablespoon olive oil
  • 1 lime (juiced)
  • 1/2 cup fresh cilantro (chopped)
  • 1/2 teaspoon garlic powder
  • salt to taste
  • 1/4 teaspoon zest of lime (optional)

Instructions
 

  • Rinse the rice under cold water until the water runs clear. This helps remove excess starch for fluffier rice.
  • In a medium saucepan, add rinsed rice. Pour in the vegetable broth and olive oil, and bring it to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed.
  • Once cooked, remove the pot from the heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork to separate the grains.
  • Squeeze the juice of one lime over the rice. Add chopped cilantro and mix well. Adjust the lime juice and salt to taste.
  • Serve the Vegan Cilantro Lime Rice warm as a side dish to your favorite Mexican or Tex-Mex-inspired meals.
