Cream of Celery Soup (Vegan)

- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cups chopped celery
- 1 zucchini, peeled and chopped (optional)
- 3 cups vegetable broth
- 1/2 cup cashews
- 1/2 cup water
- salt and pepper to taste
Heat the olive oil in a large pot over medium heat.
Add the onion and sauté for 2-3 minutes, until fragrant.
Add the chopped celery and zucchini (if using), and cook for 5-7 minutes, until tender.
Add the vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes.
In a blender, blend the cashews and water until smooth.
Add the cashew cream to the soup and stir well. Season with salt and pepper to taste. Serve hot.
