Equipment

  • 1 Blender
  • measuring cups and spoons
  • jar or container
  • 1 knife and cutting board
  • citrus juicer or reamer (optional)

Ingredients

  • 8 - 10 pitted dates, soaked in warm water for 10 -15 minutes to soften
  • juice of 2 limes
  • 1/2 cup water (adjust for desired consistency)
  • 1 tablespoon maple syrup or agave (optional, for added sweetness)
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • 1 tablespoons extra-virgin olive oil or any other preferred oil (optional)

Instructions

  • Soak the pitted dates in warm water for about 10-15 minutes to soften them.
  • Drain the water and transfer the dates to a blender or food processor.

  • If desired, add the optional olive oil or any other preferred oil to the blender or food processor.

  • Taste the dressing and adjust the sweetness or tanginess by adding more maple syrup/agave nectar or lime juice if desired.
  • Transfer the dressing to a jar or container with a tight-fitting lid.
  • Store the dressing in the refrigerator for at least 30 minutes to allow the flavors to meld together
  • Give the dressing a good shake before using it. Drizzle it over salads, roasted vegetables, grain bowls, or any other dish you like!
