Easy Chickpea Burgers

These Easy Chickpea Burgers can be ready to eat in less than 30 minutes! And the best part is they are vegan and gluten-free! They are made with wholesome ingredients like chickpeas, oats, and spices. These are wonderful for busy weeknight dinners or on-the-go weekend lunches!

Ingredients
  

  • 1 15 oz. cans chickpeas, drained and rinsed
  • 1 cup gluten-free rolled oats (quick oats is best)
  • 1/4 cup vegetable broth or water
  • 1 small red onion, finely chopped
  • 1/4 cup fresh parsley, chopped (or cilantro)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika or smoked paprika (for smoky flavor)
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt (or to taste)
  • pinch of cayenne (optional)
  • 2 tablespoons vegetable oil for frying

For assembling:

  • gluten-free burger buns
  • lettuce leaves
  • tomato slices
  • red onion rings
  • vegan mayonnaise or your favorite sauce

Instructions
 

  • In a food processor, combine the chickpeas, red onion, garlic powder, onion powder, smoked paprika, cumin, salt, gluten-free rolled oats, vegetable broth, and parsley.
    Pulse until the mixture is well combined but still has some texture.
  • Divide the mixture into equal portions and shape them into patties. If the mixture is too wet, you can add a bit more gluten-free rolled oats.
  • Heat a bit of oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side or until they are golden brown and cooked through.
  • Toast the gluten-free burger buns if desired.
    Spread vegan mayonnaise or your preferred sauce on the bottom half of each bun.
    Place a chickpea patty on each bun.
    Top with lettuce, tomato slices, and red onion rings.
    Add the top half of the gluten-free bun.
