Ingredients

  • 1 cup chopped cilantro (1 large bunch)
  • 1/4 cup olive oil
  • 3 tablespoons lime juice
  • 1 clove garlic, minced
  • 1 teaspoon agave
  • 1/4 teaspoon salt, to taste

Instructions

  • In a blender or food processor, combine the roughly chopped cilantro, extra virgin olive oil, lime juice, minced garlic, olive oil, agave syrup (or vegan sweetener), and salt.
  • Blend the ingredients until smooth and well combined. You may need to scrape down the sides of the blender or food processor to ensure that all the ingredients are evenly incorporated.
  • Taste the sauce and adjust the seasoning, adding more salt or lime juice if needed to suit your taste preferences.
  • Once the sauce reaches your desired consistency and flavor, transfer it to a serving bowl or airtight container.
  • Refrigerate the cilantro sauce for at least 30 minutes to allow the flavors to meld together.
  • Serve the vegan cilantro sauce as a dip for vegetables, a topping for tacos or burrito bowls, or as a dressing for salads or sandwiches.
