Easy Vegan Cheesy Buffalo Dip

Ingredients
  

  • 2 cup raw cashews (soaked in water for at least 4 hours or overnight)
  • 1/2 cup buffalo sauce
  • 1/2 red pepper
  • 1/2 cup water, adjust for thickness (or coconut milk for a sweeter flavor)
  • 1/8 cup nutritional yeast
  • 3 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 2 teaspoons onion powder

Instructions
 

  • Drain and rinse the soaked cashews. This helps soften them for blending.
  • In a high-speed blender, combine the soaked cashews, red pepper, water, buffalo sauce, nutritional yeast, lemon juice, garlic powder, onion powder, smoked paprika (if using), and salt. Blend until the mixture is completely smooth and creamy. You may need to scrape down the sides a few times to ensure everything is well blended.
  • Pour the blended mixture into a saucepan and heat over medium-low heat. Stir continuously to prevent the dip from sticking to the bottom of the pan. Heat for about 5-7 minutes, or until the dip is warmed through and slightly thickened.
  • Transfer the dip to a serving bowl and garnish with finely chopped green onions, red peppers or parsley, if desired.
  • Serve the vegan buffalo dip warm with your favorite dippers like celery sticks, carrot sticks, tortilla chips, or even toasted bread slices.

Tips
If you want a thicker dip, you can reduce the amount of water or coconut milk slightly.
For added flavor, consider mixing in some finely chopped fresh herbs like parsley or cilantro.
This dip can be stored in the refrigerator for up to 5 days. Reheat gently on the stove or in the microwave, stirring occasionally.
