Easy Vegan Pancakes

- 1 cup flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1 cup non-dairy milk (such as almond or soy milk)
- 2 tablespoons melted coconut oil (or vegetable oil)
- 1 teaspoon vanilla extract
In a mixing bowl, combine the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the non-dairy milk, vegetable oil, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Heat a non-stick pan over medium heat.
Ladle 1/4 cup of batter onto the pan for each pancake.
Cook until the edges start to dry and bubbles form on the surface of the pancake, then flip and cook for an additional 1-2 minutes.
