Easy Vegan Raspberry Bars

Ingredients
  

For the crust & crumble:

  • 1 1/2 cups all-purpose flour (or gluten free flour if needed)
  • 1 1/4 cups rolled oats
  • 3/4 cup coconut sugar (or brown sugar)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 teaspoon salt
  • 1 cup vegan butter (or coconut oil), melted

For the raspberry filling:

  • 14 ounces raspberry preserves or jam
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Line an 8x8 inch pan with parchment paper.
  • In a large mixing bowl, combine flour, oats, coconut sugar, baking powder, cinnamon, and salt. Stir in melted vegan butter until the mixture becomes crumbly.
  • Press about 2/3 of the mixture into the bottom of the prepared pan to form an even crust. Set aside the remaining mixture for the crumble topping.
  • Bake the bottom layer for 12 - 15 minutes in the preheated oven until light golden color. Then take out of the oven.
  • Stir in the vanilla into the raspberry preserves.
  • Spread the raspberry filling over the bottom layer crust in the pan and spread evenly.
  • Sprinkle the remaining crumble mixture over the raspberry layer.
  • Bake for 30-35 minutes, or until the top is golden and the filling is bubbling.
  • Allow the bars to cool completely in the pan before cutting into squares or rectangles. Cooling helps the bars set and makes them easier to cut.
