For the pizza dough
- 1 lb store-bought or homemade vegan pizza dough
For the pizza sauce
- 1/2 cup tomato sauce or pizza sauce (add more for saucier pizza)
For the toppings
- 2 cups sliced mushrooms (such as cremini or button)
- 2 cups spinach leaves
- 1 small red onion, thinly sliced
- 1 cup vegan shredded mozzarella cheese
- 2 cloves garlic, minced
- sprinkle of red pepper flakes (optional)
- salt and pepper to taste
Preheat your oven according to the pizza dough package instructions or your homemade pizza dough recipe.
In a pan over medium heat, heat the olive oil. Add the sliced onions and cook for a minute. Then add mushrooms and cook until they release their moisture and start to brown. Season with salt and pepper to taste.
Remove from the pan and set aside.
In the same pan, add the spinach and cook until wilted. Remove and set aside.
On a floured surface, roll out the pizza dough to your desired thickness.
Transfer the rolled-out dough to a baking sheet or pizza stone.
Spread the tomato sauce evenly over the dough, leaving a border around the edges for the crust.
