Quick and Easy Vegan Mashed Potatoes

Quick vegan mashed potatoes are delicious. This easy side dish that can be made in under 30 minutes! This recipe uses plant-based milk and vegan butter to create a creamy texture with an amazing taste. Simple to make but make the perfect pairing for many entrees to make the perfectly balance dinner.

Ingredients

  • 2 pounds potatoes (Yukon Gold or Russet work well)
  • 1/8 cup vegan butter (like earth balance)
  • 1/2 cup non-dairy milk (soy, rice oat, or almond)
  • salt and pepper to taste
  • garnish with chives and garlic powder (optional)

Instructions

  • Peel and chop 2 pounds of potatoes into cubes and boil them in salted water for about 15 - 20 minutes until tender.
  • Drain the water off the potatoes, Mash the potatoes using a potato masher or fork.
  • Add 1/8 cup of vegan butter and 1/2 cup of non-dairy milk. Mash the potatoes until smooth and creamy, but don't over mix.
  • Add salt and pepper to taste, garnish and serve hot. Enjoy!
