- 4 cups cooked rice (preferably cold, as it fries better)
- 2 cup mixed frozen vegetables (peas, carrots,)
- 3 cloves garlic, minced
- 1 onion, (yellow or white) finely chopped
- 2 tablespoons vegetable oil
- 1 tablespoon sesame oil
- 4 tablespoons coconut amino, tamari (gluten free), or soy sauce
- 1 teaspoon agave
- salt and pepper to taste
- 4 sliced green onions for garnish (optional)
Heat vegetable oil in a large skillet or wok over medium-high heat. Mix together in a small bowl the soy sauce, agave, and sesame oil and set aside.
Add chopped onion to the skillet. Sauté until fragrant and onions are becoming softened, about 3 minutes.
Add minced garlic and frozen mixed vegetables to the skillet. Stir-fry for about 2-3 minutes.
Add the cooked rice to the skillet. Break up any clumps and stir-fry with the vegetables for another 3-5 minutes, until the rice is heated through and starting to crisp up slightly.
Pour soy sauce, agave, and sesame oil over the rice and vegetables. Stir well to evenly distribute the flavors. Adjust seasoning with salt and pepper to taste.
Continue cooking for another 2 -3 minutes, stirring frequently, until everything is well combined and heated through.
Once done, remove from heat and transfer the fried rice to serving plates.
Garnish with sliced green onions if desired.
