Raw Cauliflower Rice

Ingredients
  

  • 1 head of cauliflower
  • 1 tablespoon olive oil or avocado oil
  • 1 tablespoon lemon or lime juice
  • salt and pepper to taste

Instructions
 

  • Start by removing the leaves and core from a head of cauliflower.
  • Cut the cauliflower into smaller florets for easier processing.
  • Place the florets in a food processor or blender. Pulse the cauliflower until it reaches a rice-like consistency. Be careful not to over process, as it can turn mushy.
    (If you don't have a food processor, you can use a box grater to grate the cauliflower into rice-sized pieces.)
  • Once you have the cauliflower rice, transfer it to a bowl, you can enjoy the cauliflower as is or add some additional flavorings.
  • Drizzle the olive oil and lime juice over the mixture and toss to combine and evenly distribute any added flavorings..
  • Season with salt and pepper to taste.
