Raw Vegan Energy Balls

Raw Vegan Energy Balls are a yummy, healthy treat made from fruits and nuts and has no added sugar. Great for after school snacks, movie time, picnics, or to take as a quick pick-me-up while traveling.

Ingredients
  

  • 1 cup dates
  • 1 cup nuts (almonds, cashews, or walnuts)
  • 1/2 cup shredded coconut
  • 2 tablespoons cocoa powder
  • 1 tablespoon chia seeds
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions
 

  • In a food processor, blend the nuts until they are finely chopped.
  • Add the dates, cocoa powder, chia seeds, coconut oil, vanilla extract, and salt to the food processor. Blend until everything is mixed together.
  • Roll the mixture into small balls.
  • Roll the balls in the shredded coconut until they are coated.
  • Place the energy balls on a baking sheet and refrigerate for at least 30 minutes before serving.
