Raw Vegan Energy Balls
Raw Vegan Energy Balls are a yummy, healthy treat made from fruits and nuts and has no added sugar. Great for after school snacks, movie time, picnics, or to take as a quick pick-me-up while traveling.
- 1 cup dates
- 1 cup nuts (almonds, cashews, or walnuts)
- 1/2 cup shredded coconut
- 2 tablespoons cocoa powder
- 1 tablespoon chia seeds
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- pinch of salt
In a food processor, blend the nuts until they are finely chopped.
Add the dates, cocoa powder, chia seeds, coconut oil, vanilla extract, and salt to the food processor. Blend until everything is mixed together.
Roll the mixture into small balls.
Roll the balls in the shredded coconut until they are coated.
Place the energy balls on a baking sheet and refrigerate for at least 30 minutes before serving.
