Refried Beans
Refried beans are a beloved dish in Mexican cuisine, known for their rich and savory flavor. Made from cooked and mashed pinto beans with sautéed onions, garlic and seasonings, these refried beans are mouthwatering and can be used in many Mexican, Southwestern and Tex-Mex dishes.
- 2 cups cooked pinto beans
- 2 - 3 tablespoons vegetable oil
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
Heat oil in a large skillet over medium heat. Add onion and cook until onion is soft and translucent.
Add garlic, cumin, chili powder, salt, and black pepper to the skillet, and cook for 1 minute.
Add cooked pinto beans to the skillet, and use a fork or potato masher to mash the beans until they are mostly smooth.
Cook the beans, stirring occasionally, until they are heated through and have reached your desired consistency (add water if necessary).
Serve with your favorite toppings, such as vegan shredded cheese, vegan sour cream, chopped cilantro, lime, or diced tomatoes. Enjoy!
