- 1 bunch asparagus, trimmed
- 2 - 3 cloves garlic, minced
- 2 - 3 tablespoon olive oil
- salt and pepper, to taste
Creamy Lemon Tahini
- 1/4 cup tahini
- 1/8 cup lemon juice
- 5 tablespoons water (to thin)
- 1/4 teaspoon garlic granules
- 1/4 teaspoon salt (to taste)
Wash, pat dry, and trim the stems that are woody ends (the thick, tougher part at end - about 1/2 inch off) of asparagus. Preheat to 400°F (200°C) and line a baking sheet with parchment paper.
Place asparagus on the sheet, drizzle with olive oil, and toss with garlic, salt, and pepper.
Roast for 15 minutes, until tender with lightly crisp edges.
In a small bowl, whisk tahini, lemon juice, garlic, salt, and water until smooth and creamy.
Transfer asparagus to a serving plate and drizzle with tahini. Serve warm.
