  • 2 – 3 cloves garlic, minced
  • 2 – 3 tablespoon olive oil
  • salt and pepper, to taste

Creamy Lemon Tahini

  • 1/4 cup tahini
  • 1/8 cup lemon juice
  • 5 tablespoons water (to thin)
  • 1/4 teaspoon garlic granules
  • 1/4 teaspoon salt (to taste)

Instructions
 

  • Wash, pat dry, and trim the stems that are woody ends (the thick, tougher part at end – about 1/2 inch off) of asparagus. Preheat to 400°F (200°C) and line a baking sheet with parchment paper.
  • Place asparagus on the sheet, drizzle with olive oil, and toss with garlic, salt, and pepper.
  • Roast for 15 minutes, until tender with lightly crisp edges.
  • In a small bowl, whisk tahini, lemon juice, garlic, salt, and water until smooth and creamy.
  • Transfer asparagus to a serving plate and drizzle with tahini. Serve warm.
